As I mentioned to you already, for me is a “young” beetroot time. My love for beetroots is constant, does not change. But in this time of the year I buy always young beetroots with chard ( young leaves with red stalks) sometimes called Swiss chard. Basically in Poland during the Spring time young beetroot with chard are sold everywhere, and it is quite common.
As I am a smoothie addict and I usually drink them during breakfast, I couldn’t experiment also with the young beetroots.
I already tried a few combinations, and here is one of them.
What you need:
- 1 young beetroot with chard (usually when you buy them each beetroot has quite a few leaves with red stalks. Use it all
- 1 banana
- 1 peach
- 1 cup of strawberries
- 1 glass of coconut mylk (I use home made. Recipe here)
- 1 glass of water
- 2 tbs of honey
- 3 spoons of flax seeds
- Optionally if you have, add 1 tbs of barley grass, as a super-food addition with vitamins and minerals.
It will serve for a bit more than 3 glasses. Remember that whenever you are lacking any of the ingredient, any fruit etc. just experiment with your own taste. You don’t need to be strict with the recipe.
