Lunch box inspiration: cauliflower puree+ salad and dessert-forest fruits chia jelly

Today I share with you yet another delicious set which you can take with you to work.  As I already wrote in another post, I like to take to work my lunch boxes. I will do my best to share with you more often my ideas.

Difficulty and time: easy and fast!

This set I prepared before the work, in the morning. Basically, while cooking cauliflower and boiling the egg for salad, in the meantime i cut all the veggies for the salad. Once the egg was boiled, i mixed it with salad, topped with spices and oil. I filled the box. Also the dessert I prepared while waiting for the cauliflower. I just mixed the fruits with hot water, chia and honey, mixed several times until fruits fall apart a bit and filled the small box. This dessert will get the jelly texture after some hours, due to chia seeds. So it will be ready, once you decide you want your dessert at work. Once the cauliflower was cooked I blended it quickly with ghee butter and spices. All together takes around 20 minutes. So, you have no excuses of not eating healthy at work!

Second breakfast:

  • Full grain bread with avocado and feta cheese+ kiwi

  • Cauliflower puree: Cook cauliflower. When ready, add 1 teaspoon of ghee butter (clarified butter), pinch or two of powdered nutmeg, pinch of salt (I use the pink Himalayan salt) and pinch of fresh pepper . Blend everything until smooth and in puree texture. You can top it with fresh parsley.

  • Salad: Handful of lamb’s lettuce, tomato, 1 green celery stick, 1 egg (hard boiled), handful of sprouts, 2 champignon mushroom, salt, pepper, 1 table spoon of pumpkin seeds oil, 1 teaspoon of balsamic vinegar

  • Forest fruit chia jelly: unfroze a ½ cup of forest fruits (during the winter, forest fruits like raspberries, strawberries, blueberries- as they are not available fresh in good quality, I buy them frozen) and mix with ½ cup of hot water (boiled). Add 2-3 tablespoons of chia and mix few times until chia starts to absorb some of the juice. Add 1 teaspoon of honey and mix again. After 2-3 hours it will have a fruit jelly texture.

I also prepared a morning green tea mix with mate, added ginger and lemon. I took a few dates as well, in case I have a strong craves for sweets.
