Plum’s crumble with muesli,no flour!

Lately as I am adapting to the lower temperature and autumn vibe around, I started to prepare warm breakfasts. Aromatic and comforting. Such as this plum crumble based on muesli, shredded coconut, with pinch of cinnamon, coconut oil and honey. You can eat it perfectly for a breakfast, but it will also serve as a second breakfast (I take it with me in a lunch box to the office) or afternoon dessert. You choose! We are still in the season for different type of plums, so does not really matter which type you will use. I have used Greengages which are the sweet and juicy type of dessert plum. They range in colour from yellow to dark-green.

What you need:

  • 500-600 gr of plums
  • 10 spoons of full grain muesli (I had one which already included some dry fruits and seeds)
  • 5 spoons of oatmeals
  • 3 spoons of coconut oil
  • 3 spoons of dry fruits (I used a goji berries, as I didn’t have anything else)
  • 5 spoons of shredded coconut
  • 2 spoons of honey
  • 1 spoon of cinnamon
  • 2 spoons of semolina

Heat the oven to 180-200 C.Pull out the pits from the plums. Arrange them in a baking dish- in halves. Mix all the rest ingredients, except the semolina, which you will use separately at the top. I used spoon to stir it. Prepared “crumble” put in the freezer for about 30 min. Scatter the crumble over the plums. Top it with semolina, to make it more crispy. Bake for about 25 minutes.

As there is no flour used, the crumble will not be in a form of a cake. While you will serve it, crumble may fall apart a bit. I don’t mind it, I serve it with a spoon. If you want to serve it to your guests, you may  consider of using smaller baking dishes (for example 6 smaller, rather then 1 big- it is up to you!). Enjoy!
