Zucchini delicatessen pesto and a few words on creativity

There are those mornings when creativity just wakes up as soon as I am awake.  And these moments make me happy. Thanks to my blog, my creativity which I always had, has woken up strongly. For a while, for different reasons, it was hidden, or I can call it, it fallen into a winter sleep, like the bears do.  One day I will share with you more about it,the reasons and why it is so important to conect to  ourselves. But it will be soon. Actually, there are so many things and topics I would love to share with you, and writing just make me happy.

Ok, it was supposed to be about the “Zucchini delicatessen pesto”.  So here you go. I came up with this recipe, one day after my morning yoga practice at home. Lately, I wakes up quite early to start my day with doze of productivity.
I dedicate my mornings to yoga and to this blog, as during the day I am working full time. I tried to mix different ingridients and I have to say it is simply delicious. Wellbelicious for sure.You can use it with full grain pasta, same as traditional pesto or as a dip for your veggies ,for the bread or baked potatoes. Use your imagination, and I am sure you will find many different ways how to eat it!

What you need:

  • 1 beautiful zuchini
  • 1/2 bunch of parsley
  • 1/2 bunch of coriander
  • 1 clove of garlic
  • 1 spoon of sea salt
  • Fresh peper
  • 5 spoons of pumpkin seeds oil
  • 2 spoons of pumpkin seeds
  • 2 spoons of sunflower seeds
  • I also added 5 spoons of water, for easier blend. But I would say, this is optional
    and depends what type of blender or mixer do you use, and how easy it blends.

Slice the zuchini, and grill it on the pan. I do it with traditional pan, without using any oil.
I grill it for a few minutes on each side, until zucchini becomes soft,but still firm. Add zuchini into a mixer with  all other ingridients. Blend it until smooth. You can always adjust the taste according to your prefferences by adding more or less of salt and pepper. The ammount I used here was perfect for my taste.

Yet another recipe that makes my body and eyes happy. Beauty is just all around us. We just need to learn how to spot it in simple things more often.
